 Jun Innovations is developing a new supercooling device that is able to preserve the original freshness of meat, fish, and produce over an extended period of time. Using a combination of pulsed electric and magnetic fields, the supercooling process lowers the water temperature in a food product to below the freezing point, without the formation of ice crystals that damage cell structure and affect texture and fresh quality. Supercooled foods can be preserved and stored over an extended period of time, limiting spoilage and adding value to businesses across the food industry.
